Se prepara un alm\u00edbar (mezcla de az\u00facar y agua) ligeramente tostado. Se a\u00f1ade la nata sin dejar de mover con una varilla. Se retira del fuego y se a\u00f1ade la mantequilla bien fr\u00eda en trocitos peque\u00f1os. Se reserva la crema a temperatura ambiente. Una vez que se ha enfriado, se mezcla con la crema pastelera y la crema de mantequilla, obteniendo la crema de caramelo. Se montan las claras a punto de nieve con el az\u00facar. Se mezcla la mitad del merengue con almendra en polvo y az\u00facar glass y se humedece con una cucharada de agua. Cuando est\u00e9 bien mezclada, se le a\u00f1ade el resto del merengue, obteniendo una crema similar a la de un bizcocho. Se prepara una bandeja con papel de horno o vegetal, sobre la que se van dibujando, con la manga pastelera, peque\u00f1as bolas aplastadas. Se hornea a 160 grados durante diez o doce minutos. Se deja enfriar.
